Serves 4
2 cups apricot juice or nectar
½ cup honey simple syrup*
2 cups seltzer
1 cup mint leaves, loosely packed
ice
In a large pitcher, combine the apricot juice and honey simple syrup.
Add the seltzer and mint leaves.
Stir until well blended.
Serve immediately over ice.
*Honey Simple Syrup
1 cup water
1 cup sugar
½ cup honey
In a small saucepan, bring the water, sugar and, honey to a boil.
Stir continuously, until the sugar and honey are completely dissolved.
Remove from heat, set aside and let cool to room temperature.
